Ingredients

  • serves 8
  • 8 tbsp butter
  • 1/2 pound mushrooms, sliced
  • 3 tbsp flour
  • 2 cups heavy cream or milk
  • 1/4 cup dry sherry
  • 4 cups cooked lobster meat
  • Salt to taste
  • 1/3 cup grated Parmesan cheese

Directions

Preheat the oven to 450 F. Butter a shallow baking dish. Melt 5 tbsp of the butter in a saucepan, add the mushrooms and cook until they are softened. Remove and set aside.
Melt the remaining 3 tbsp of butter, stir in the flour, and cook until smooth and blended.
Slowly stir in the cream or milk and cook over low heat, stirring until the sauce is smooth and thickened, add the sherry and cook 1 minute more.
Remove from the heat and add the lobster and salt to taste. Spoon into the baking dish, sprinkle with cheese, and bake about 10 minutes, until the cheese is melted and lightly browned.
Serves this with steamed rice.
