Ingredients

  • 3 cups (710 ml) rice, boiled
  • 2 slices bacon
  • 1/4 cup(59 ml)onion, chopped
  • 1 tbsp.(15 ml) all-purpose flour
  • 1 cup(237 ml) tomato pulp
  • 1/3 cup(79 ml) water
  • 2 cups(473 ml) diced cooked chicken, ham,sausage, shrimp or crab
  • 1/4 tsp.(1.2 ml) dried thyme
  • Worcestershire sauce
  • Salt and freshly ground black pepper
  • Fresh parsley for garnish

Directions

1. Preheat oven to 300 degreesF(149 C).

2. Prepare boiled rice and place it in a large mixing bowl. (Wild rice is particularly tasty used in this dish).

3. In a Dutch oven, saute bacon slices lightly.

4. When bacon is starting to brown, add onion and saute until golden. Do not let bacon get crisp.

5.Stir in flour and add tomatoes and water. Bring these ingredients to a boil.

6. Stir in the rice and either meat or fish or any combination thereof.

7. Add the thyme, Worcestershire sauce, salt, and pepper to taste.

8. Cover and place in oven for about 1/2 hour.

9.Serve sprinkled with chopped fresh parsley.Note: This is a marvelous way to use leftover meat or shellfish to make an unusually tasty dinner. You can put almost anything in this dish.
