Ingredients

  • 1 cup firmly packed brown sugar
  • 1/2 cup sugar
  • 1/2 cup margarine
  • 1/2 cup veg. oil
  • 3 eggs
  • 1 tsp. vanilla
  • 1/2 cup buttermilk
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp. allspice
  • 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 tsp. baking soda
  • 1/4 cup cocoa
  • 1 3/4 cup shredded zucchini - drained
  • 1 cup semisweet chocolate pieces

Directions

In a large mixer bowl, cream together the sugars, margarine and oil.
Add eggs, vanilla and buttermilk; stir well to mix.
Sift together all the dry ingredients and then shift into mixer bowl with mixture. Beat well.
Drain zucchini, if necessary, and stir into cake mixture.
Pour into greased 13 x 9" baking pan.
Sprinkle top with chocolate pieces and bake in a preheated 325F oven for 45 min or until cake tests done.
Makes 12 servings.
