• Cake:
  • 1 (20 ounce) can crushed pineapple in its own juice (undrained)
  • 2 cups flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • Icing:
  • 4 ounces light cream cheese
  • 1 tablespoon light margarine
  • 1 teaspoon vanilla
  • l 2/3 cups powdered sugar


Mix all ingredients in large bowl. Pour into a 13x9x2-inch baking pan coated with no stick cooking spray and dusted with flour. Bake at 350 degrees for 30 to 40 minutes. Frost with icing (see directions below) while cake is hot.

Icing directions:
In mixing bowl, beat cream cheese and margarine until light. Add vanilla and powdered sugar, mixing until well combined. Yield: 24 servings.
