Ingredients

  • 1/4 cup margarine, softened
  • 2 tablespoons strawberry jam
  • 5 teaspoons sugar
  • 1 egg, beaten
  • 1/4 cup skim milk
  • 1 teaspoon vanilla
  • 1 cup self-rising flour
  • 1 medium Granny Smith apple
  • 2 teaspoons lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg

Directions

Beat margarine, strawberry jam and 5 teaspoons splenda until creamy.
Blend egg, milk and vanilla; add to margarine mixture alternately with flour. (Mixture will be thick.) Spoon batter into greased and waxed-paper-lined 8-inch round cake pan.
Peel and core apple and cut into slices; toss with lemon juice. Arrange decoratively over cake batter.
Bake in preheated 350F oven until toothpick comes out clean, about 30 minutes. Turn onto wire rack with apple on top. Sprinkle with cinnamon and 1/4 teaspoon splenda while cake is still warm.
