Ingredients
- 1 large potato, finely chopped
- 1 large onion, finely chopped
- 1/4 cup chopped carrots
- 1/4 cup thinly sliced celery
- 1 cup water
- 1 cup shredded sharp Cheddar Cheese
- 2 cups chicken broth
- 1/2 cup half and half
- 2 tblsp. snipped parsley
Directions
Heat vegetables and water to boiling in 2-quart saucepan; reduce heat. Cover and simmer until vegetables are tender, 10-15 minutes. Stir in cheese, broth, and half and half; heat through. Sprinkle with parsley. 4 to 6 servings.
