Ingredients

  • 4 boneless, skinless chicken breasts
  • 2/3 cup hot water
  • 2 Tbls. butter buds
  • 2 cups stove top stuffing
  • 1 small green pepper - chopped
  • 1/4 cup onion - chopped
  • 1 (8oz.) can crushed pineapple - undrained
  • 2 Tbls. brown sugar
  • 2 Tbls. vinegar
  • 1/4 tsp. ground ginger

Directions

Preheat oven to 400.
Pound chicken breats to 1/4" thickness.
Mix hot water and butter buds (you may use margarine if you aren't watching fats)in a bowl.
Stir in the stuffing mix, green pepper onion & half the pineapple and juice.
Spoon the stuffing mix evenly over chicken. Roll up tightly, starting with long end. Secure with toothpick. Place seam side down in square baking dish that has been coated with Pam.
Place any leftover stuffing in the middle.
Mix remaining pineapple and juice with brown sugar, vinegar and ginger. Spoon over chicken.
Bake uncovered, without turning for 30-40 minutes or until tender.
