Ingredients

  • Serving Size : 4
  • Baby spinach (4-servings)
  • 6 slices bacon -- fried crisp and dice
  • 1/4 cup olive oil
  • 1 red onion -- finely sliced
  • 8 white mushrooms -- sliced
  • 2 teaspoons minced garlic
  • 1/4 cup walnut pieces
  • Sections from 1 pink grapefruit
  • 2 tablespoons pink grapefruit juice
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons honey
  • Salt and pepper to taste
  • Cherry tomatoes
  • Croutons

Directions


Remove stems from spinach and arrange on individual plates.

Fry bacon until crispy, then dice.

In olive oil on medium heat, saute onion, mushrooms, garlic and walnut pieces for 2 minutes. Remove from heat.

Add diced bacon, grapefruit sections, grapefruit juice, balsamic vinegar, honey, salt and pepper to taste. Spoon warm dressing over each serving of spinach.

Garnish with cherry tomatoes and croutons. Serve immediately.
