Ingredients

  • 3 1/2 cups oats, quick or old-fashioned, uncooked
  • 3/4 cup coarsely chopped pecans
  • 1/2 cup honey
  • 1/3 cup (5 tbsps. plus 1 tsp.) margarine or butter,melted
  • 1 tsp. vanilla extract
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. salt, optional
  • 1 6- oz. pkg. dried mixed fruit, diced

Directions

Preheat oven to 350 degrees(180 C).In a large bowl, combine oats, pecans, honey, margarine or butter, vanilla, ground cinnamon and salt; mix well.Spread evenly over a 15x10-inch jelly-roll pan. Bake 30-35 minutes or until golden, stirring after 10 minutes. Cool completely. Stir in fruit.Store tightly covered for up to 1 week.


Makes 14 servings of 1/2 cup each with 220 calories, 1 g fat and 0 mg cholesterol when prepared with margarine.
