Ingredients

  • 5 red bell peppers (roasted, peeled, cored & seeded
  • 1 TBS olive oil
  • 1/2 C onions, diced
  • 2 garlic cloves, minced
  • 1/2 tsp cayenne pepper
  • 3 C chicken broth
  • salt & pepper
  • sour cream and cilantro garnish

Directions

Heat olive oil in large pot to medium-high. Sautee onions & garlic until soft.
When cooked add roasted pepper and onion mixture to food processor, adding small amount of broth. Pour mixture into pot with rest of stock. Add the cayenne and salt and pepper. Simmer 10 minutes. May be served hot or cold.
Garnish with sour cream and cilantro.
