Ingredients

  • 2 pounds fresh green beans -- trimmed
  • 1 pound pearl onions
  • 1/4 cup butter or margarine
  • 1/3 cup firmly packed brown sugar

Directions

Preparation:
Arrange beans in a steamer basket over boiling water. Cover and steam 15 minutes; set aside. Place onions in boiling water 3 minutes; drain and rinse with cold water. Cut off root ends of onions; peel onions. Arrange onions in steamer basket over boiling water. Cover and steam 5 minutes; set onions aside. Melt butter in a large heavy skillet over medium heat; add sugar, and cook, stirring constantly, until bubbly. Add onions; cook 3 minutes, stirring constantly. Add beans, and cook, stirring constantly, until thoroughly heated.

Variation: You may substitute 2 pounds of fresh brussels sprouts for the beans.
