Good for breakfast, brunch, lunch, or dinner


  • mushroom fritta: 1C fresh sliced mushrooms 2/3c chopped onion 1C chopped green pepper( can add or substitute red, orange or yellow peppers), 1 c shopped zuchini 1 tsp minced garlic 5 eggs 1/3 C lite cream S & P 11/2 C soft bread crumbs, 8 oz of cream cheese cut in 1/2" cubes 1 C shredded cheddar cheese olive oil


saute first 5 ingredients in olive oil Beat eggs add creeam, S/P to taste, and add to the sauted mushroom mixture, bread crumbs, creamed cheese and cheddar...stir but leave cream cheese cubes intact pour into well greased 9 inch pie pan,Bake at 350 for 40-45 5-10 minutes cut into wedges and serve For lower cholesteral and calories use more egg whites and fewer yolks, and use whole milk vs lite cream,use red, yellow or orange peppers instead of green..... real creamed cheese does not substitute very well...ENJOY!!
