Ingredients

  • 8 sweet sausages
  • 1 tablespoon olive oil
  • 6 eggs, separated
  • 1 cup milk
  • 6 tablespoons all-purpose flour
  • Salt and freshly ground pepper to taste
  • 1 tablespoon rosemary leaves

Directions

Preheat oven to 400 degrees. Prick each sausage with a fork in two or three places, then place in a baking dish with the olive oil. Put dish in preheated oven for 20-25 minutes, until all fat has been rendered out of the sausages. Meanwhile, prepare a batter by mixing the egg yolks, milk, flour, salt, pepper, and rosemary leaves in a bowl with a wooden spoon. Let batter stand 20 minutes in a cool place; do not refrigerate. When the sausages are ready, take the baking dish from the oven and remove all but 2 tablespoons of the fat. Beat eggwhites until stiff and quickly fold into the batter. Pour the batter over the sausages in the hot baking dish and put back in the oven, still at 400 degrees. Bake about 35 minutes. Remove from the oven, allow to cool 5 minutes. Serves4.
