Ingredients

  • 3 cups finely chopped onion
  • 8 cloves garlic, minced
  • 1/4 cup olive oil
  • 4 cans (1lb. each) tomatoes
  • 4 cans (15oz. each) tomato sauce
  • 1/2 cup minced parsley
  • 2 tbsp. sugar
  • 1 tbsp. salt
  • 4 tsp. crushed oregano
  • 4 tsp. crushed basil
  • 1/8 tsp. cayenne pepper
  • 3 1/2-4lb. cleaned raw shrimp, fresh or frozen*
  • 48 oz. spaghetti, cooked and drained

Directions

Cook and stir onion and garlic in hot oil in large heavy saucepot or roaster until onion is tender.Stir in remaining ingredients except shrimp and spaghetti. Simmer uncovered over low heat 1 1/2 hour, stirring occasionally, or until sauce is thick. Stir in shrimp; cook 10 to 20 minutes or until shrimp is pink and tender. Serve with hot spaghetti. 24 servings (1 cup sauce per portion)
