Cook the tuna with less - or no - oil, substitute 1T olive oil for the butter in the sauce and enjoy!

Ingredients

  • 4 (7 oz.) center cut tuna steaks, about 1/2" thick
  • 4T. sesame oil
  • 3/4 lb. snow peas
  • 1T. unsalted butter
  • 1 clove garlic, finely minced
  • 1/2 bunch scallions, chopped
  • 1T. finely chopped ginger root
  • 1 cup chicken stock
  • 3T. hoisin sauce
  • 1/3-1/2 cup soy sauce
  • 1-2 T. arrowroot

Directions

Wipe tuna. Rinse tuna steaks quickly under cold running water and pat dry.
Brush on both sides with 3 T. sesame oil and set aside. Prepare grill.

Blanch snow peas in boiling water. Drain; immediately run cold water over
them to keep crisp and green. Trim ends and cut into julienne strips. Set
aside.

Sauce: Melt butter in a saucepan; add minced garlic, scallions and ginger root
and saute several minutes, stirring, just until limp.

Add chicken stock, bring to a boil and cook briskly until liquid has reduced
to half. Lower heat to simmer. Add hoisin sauce and soy sauce to taste.

Mix arrowroot with a little cold water to form a paste and stir into sauce.
Cook sauce over low heat just until it begins to thicken.

Taste for seasoning. Add soy sauce or pepper.

Grill tuna.

Saute peas in remaining oil.

Place snow peas on plates, top with steaks and spoon on hoisin sauce.

Serves 4.
