Ingredients

  • 1 1/2 cups olive oil
  • 1/2 cup lime juice
  • 1 tsp black pepper
  • 3 cloves crushed garlic
  • 1 tsp ground coriander
  • 1/2 tsp cardamon
  • 1/2 tsp rosemary
  • 4 chicken breasts
  • 4 cups strawberries
  • 1 cup walnuts
  • Romaine lettuce for 4 plates

Directions

Mix olive oil, lime juice, and spices and herbs into marinade, set aside 1 cup for dressing. Marinate chicken in refrigerator overnight. The next day, grill chicken about 20 minutes, or until thoroughly cooked. Blend the set aside cup of marinade and strawberries in food processor to make the dressing. Diagonally slice the grilled chicken, place on bed of lettuce, garnish with whole berries and walnuts. Serve with dressing.
