Ingredients

  • 8 new red potatoes or small purple potatoes, scrubbed and cut in quarters
  • 2 green onions, chopped
  • 2 garlic cloves, minced
  • 1 sprig fresh rosemary, stems removed, chopped
  • 1-2 tbsp. extra-virgin olive oil
  • Salt and pepper to taste

Directions

To make aluminum-foil "tents", lay a large piece of foil on the counter and place the potatoes in the center. Sprinkle green onions, garlic and rosemary over them and drizzle olive oil on top. Add salt and pepper as desired. Pull the middle pieces of the aluminum foil together and roll down toward the center. Then roll the ends toward the middle. Prepare the grill or electric grilling machine for cooking. If using a charcoal grill, place the aluminum-foil tent on the cooler portion of the grid over indirect heat, cover, and cook about 40 minutes, or until the potatoes are tender. If using an electric grilling machine, place the aluminum-foil tent on a hot grill and cook for 12 to 15 minutes, or until the potatoes are tender.
