To die for. Very rich. Sorry I couldn't be more explicit about the amounts but the inkeeper who shared this recipe with me wasn't very specific.

Ingredients

  • 1 1/2lbs shrimp (use U-12 raw green shrimp. 12 to a pound).
  • 1 1/2 cups fresh white breadcrumbs (take couple slices soft white bread and put in food processor)
  • 1 tablespoon dried oregano.
  • 3 cloves crushed garlic
  • 1/4 cup chopped parsley
  • salt & pepper to taste
  • 1 can crabmeat, shredded
  • 1/4 cup melted butter

Directions

Remove legs, and shell except shell on tail.Take vein running down back out. Cut underside of shrimp and flatten out (do not cut all the way through.

Make stuffing with rest of ingredients. The whole can of crabmeat might be too much so use according to own taste.

It is important to note that in this recipe all the anounts are just approximates. Use more or less according to taste. The amount of melted butter should just be used to hold the stuffing together.

Press the stuffing onto the flattened shrimp and bake in a 500 degree oven for 7 to 12 minutes.

Serve stuffed and baked shrimp with individual melted butter and slice of lemon.
