Ingredients

  • 1 pound dried split green peas
  • 1 1/2 quarts chicken stock
  • 2 large smoked ham hocks
  • 2 cups milk
  • 1 large onion, chopped
  • 2 large potatoes, peeled and diced
  • 2 bay leaves
  • 3 dashes of hot pepper sauce
  • 1 to 2 tablespoons fresh dill
  • Freshly ground pepper to taste

Directions

Rinse the split peas and combine them with all the other ingredients in a large pot. Bring to a boil, then reduce heat and bring the liquid to a simmer. Cover and cook 1 1/2 hours, stirring occasionally. Remove the cover and cook an additional hour. Remove the ham hocks and trim the meat by discarding fat and bone. Return meat to the pot and cook an additional hour.

Makes approximately 2 quarts.
