Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 tsp butter
  • 2/3 cup sour cream
  • 1/3 cup salsa
  • 2 cups shredded Cheddar cheese, divided
  • 1/2 cup diced bell pepper
  • canned jalapeno peppers (to taste)
  • 1/4 cup sliced black olives (optional)
  • 4 large flour tortillas

Directions

Heat oven to 350 F. Cut chicken into small cubes. Saute chicken in butter in a skillet over medium-high heat. Combine chicken, salsa, sour cream, 1-3/4 cups cheese, pepper, jalapenos and olives in a large bowl. Divide mixture evenly among 4 tortillas. Fold tortillas to enclose filling completely and place seam side down on a medium baking dish. Bake for 20 minutes. Sprinkle remaining cheese over top and continue baking for an additional 5 minutes.

Makes 4 servings.
