Thick and creamy with a good sharp flavor. Makes about 6 cups.
- 28oz canned artichoke hearts(drained), 1 egg, 20oz condensed chicken broth, 3T butter or margarine, 3T flour, 1/8t salt, 1/8t pepper(white is best), 1c half and half, sour cream or chives for garnish
Put artichoke hearts into blender or food processor. Add egg and some chicken broth. Blend until smooth. Set aside.
Melt butter in saucepan over medium heat. Mix in flour, salt and pepper. Add cream, stirring until it boils and thickens. Gradually stir in contents of blender and remaining chicken broth. Heat. Taste for seasoning, adding more salt and pepper if needed. Serve hot. A dab of sour cream or a sprinkle of chopped chives in the center makes a good garnish.
