Ingredients

  • 1/2 cup butter
  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 1/2 cups flour
  • 1/2 tsp. salt
  • 1 tsp baking soda mixed into
  • 1/2 cup buttermilk
  • 1 cup mashed bananas
  • 1/2 cup chopped nuts

Directions

Cream butter and sugars together. Add eggs, flour and salt: mix. Add buttermilk mixture and beat well. Mix in bananas and nuts. Pour into a greased and floured loaf pan. I use several mini loaf pans. The larger the pan, the longer it takes to cook and the darker the bread becomes on top. Bake 350 for 1 hour or until done. Cool 10 minutes in pan and turn out on rack. Enjoy!


* Can make buttermilk substitute by making soured milk: Take 1 cup of milk and add 1 Tablespoon of lemon juice or vinegar. Out of many recipes I have tried over the years, this recipe is definitely the best! Make sure to add baking soda directly to the buttermilk! Enjoy!
