Ingredients

  • 1 pound Italian sausage
  • 1 glove garlic, minced
  • 1 Tablespoon oregano
  • 1 Tablespoon dried basil
  • 2 Tablespoons parsley flakes
  • 1-1/2 teaspoon salt
  • 1-1 pound can, (2 cups) drained tomatoes
  • 2-6 ounce, (1-1/2 cup) tomato paste
  • 10 ounces lasagna noodles
  • 3 cups creamy cottage cheese, or ricotta cheese
  • 1/2 cup parmesan cheese
  • 2 teaspoons salt
  • 2 beaten eggs
  • 1/2 teaspoon pepper
  • 1 pound mozzarella cheese

Directions

Brown meat slowly, spoon off excess fat.
Add garlic, basil, salt, oregano, tomatoes, and tomato paste. Simmer about 30 minutes.
Cook noodles.
Beat eggs and mix the cottage cheese and parmesan, 2 teaspoons salt, pepper, and parsley.
Layer noodles, cottage cheese filling, mozzarella, meat sauce, noodles, cottage cheese filling, mozarella, meat sauce.

Bake at 375 degrees
Let set about 10 minutes before serving.
This is for two 9x13 inch baking dishes.
