Ingredients

  • 1 tsp. salt
  • 1 tsp. oil
  • 1 1/4 cups milk
  • 2 eggs
  • 1 cup flour
  • 8 oz. dry cottage cheese
  • 1/4 cup sugar
  • 1/4 tsp. cinnamon
  • Oil for deep frying

Directions

Mix salt, oil, milk, and one egg together well in mixing bowl. Slowly add flour; mix to form smooth batter. Oil a 6-inch crepe pan lightly ; heat until hot. Pour in 2 tablespoons batter; tilt pan until batter is evenly spread.Cook over low heat until set; remove from pan. Continue process until all batter is used.To make filling, combine cottage cheese, remaining egg, sugar, pinch of salt, and cinnamon. Place 1 or 2 tablespoons filling in center of each blintz. Roll up blintzes.Heat oil in deep skillet to 375 degrees. Fry blintzes, a few at a time,until golden brown; drain and serve topped with sour cream, blueberries, or strawberries. If you prefer, blintzes can be baked on a well-greased baking sheet in a 400 degree oven until golden;brush with melted butter before baking.
