Ingredients
- 1 cup ricotta cheese
- 1/4 cup olive oil
- 1 tablespoon white wine vinegar
- 1/4 cup chopped red onion
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 18 large pasta shells, cooked and drained
- 1/3 cup grated Parmesan cheese
- 1/4 cup dry bread crumbs
- 1 tablespoon chopped fresh parsley
- 1 tablespoon butter, melted
Directions
Preheat the oven to 350 F. Combine the ricotta cheese, oil, vinegar, onion, oregano, basil, salt, and pepper. Mix well. Fill the shells with the mixture and place filled side up in a shallow baking dish. Add a couple of tablespoons of water to the dish and cover with foil. Bake for 30 minutes or until thoroughly heated. Combine the Parmesan cheese, bread crumbs, parsley and the butter. Sprinkle over the shells and continue baking, uncovered, for 5 minutes. Carefully remove to a serving platter. Serves four.
