Ingredients

  • Pastry of 2 (9 inch) one crust pies
  • 3 cans (4 1/2 ounces each) deviled ham
  • 1/4 cup plus 2 tblsp dry breadcrumbs
  • 1 1/4 cups shredded Cheddar cheese
  • 2/3 cup minced onion
  • 8 eggs
  • 3 cups whipping cream
  • 1 1/2 tsp salt
  • 1/2 tsp sugar
  • 1/4 tsp ground red cayenne pepper

Directions

Preheat oven to 425 degrees. Prepare pastry and place in pans. Mix the deviled ham, bread crumbs, shredded cheese and onion. Spread half of the mixture in each pie shell. Beat the eggs along with the remaining ingredients and pour over mixture in pie shells. Bake in the preheated oven for 15 minutes, then lower temperature to 300 degrees and bake for 30 more minutes, or until a knife inserted 1 inch from the edge comes out clean. Let stand for 15 minutes before serving.
