Ingredients

  • 1 1/4 lbs red delicious apples
  • 5 ozs celery
  • 3 ozs mayonnaise
  • 2 ozs chopped walnuts
  • 1/2 squeezed lemon to taste

Directions

Peel,core and medium dice apples(start with 2lbs apples to get 1 1/4lb diced apples
Place in mixing bowl and mix with lemon juice so they won't discolor
Before dicing the celery,blanch it in boiling water for 60 seconds and cool it with cold water.
combine apples,mayo,celery and chill.Serve on a bed of BOSTON or Romaine leaf lettuce topped with walnuts and add a simple fruit garnish(orange segments,berries,kiwi,small vege flowers.Traditionally this is also served with tiny sweet finger sandwiches(example:date nut bread and raspberry jam)
