You can freeze prepared pie crusts easily. Wrap tightly or put pan with crust in large zip lock baggie. You can freeze apple and some berry pies once they are put together, too. No juicy fillings, though. No custard or cream pies should be frozen. Just take out crust, bake & fill. Or with two crust pies, no need to thaw, just cover crust edge to protect from burning as it bakes. I've done this for many years with great results.
