Ingredients

  • 4 lbs. veal roast
  • 1 onion
  • 4 tbsp.butter
  • 2 tbsp.flour
  • 4 slices salt pork (cut thin)
  • Salt
  • Pepper

Directions

1. Wipe veal roast. Cut four places on top of veal, slice onion and stick in the opening.

2.Rub a paste made of the flour and butter over the veal, salt and pepper. Over the top lay the slices of pork.

3.Roast in shallow pan. Serve garnished with apple rings and parsley.Temperature 325 degrees
Time 35 minutes per lb.
