THIS is a classic French salad dressing. A red dressing does not exist in France, that is an American version of it. You could possibly adapt the above recipe by adding a bit of tomato sauce or paste, but that would be a shame. Try it the way it is, I don't think you will be disappointed.

Ingredients

  • 1 T vinegar (of choice)
  • 3 T olive oil - good quality
  • 1 t Dijon mustard
  • chopped chives (optional)
  • finely minced onion (optional)
  • garlic (1-2 cloves)
  • salt and pepper to taster

Directions

put salt, pepper, mustard (and chives and onions) in bottom of bowl; add vinegar and mix; slowly drizzle in olive oil, stirring constantly. add
garlic cloves (cut in half) and let sit overnight in the refridgerator. Remove garlic and bring to room temperature before using in a salad.
