This recipe is used at Chef Mickey's Village Restaurant in Disney Village. I've never tried it, but if its consistent with the other recipes I have tried in this book, it should be excellent.


  • 1 pound chicken meat, cooked, diced
  • 1/2 cup mayonnaise
  • 1 apple, peeled, cored, diced
  • 1 tablespoon apple juice
  • 1/4 cup celery, diced
  • 1/2 teaspoon spicy brown mustard
  • Salt
  • Pepper
  • Fresh pineapple spears


Mix first 6 ingreadients and season with salt and pepper to taste. Chill one hour.
Serve with fresh pineapple spears or other fresh fruit of your choice.

Yields 4 servings.
