Ingredients

  • 3 eggs
  • 3 teaspoons vanilla
  • 2 cups sugar
  • 1 cup oil
  • 2 cups shredded zucchini
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 3 teaspoons cinnamon

Directions

In large bowl, combine eggs, vanilla, sugar, oil and zucchini. Add dry ingredients and mix well. Split between two loaf pans and bake at 350 for 55-60 minutes.
