Ingredients

  • 1 1/2 lbs. cheese or chicken tortellini
  • 2 pkgs. Good Seasons Zesty Italian Dressing, mixed
  • 2-3 cloves garlic, crushed
  • 2 cups broccoli flowerettes
  • 1 yellow bell pepper (color doesn't really matter it justs adds another color to the salad), sliced
  • 5 green onions, chopped
  • 20 cherry tomatoes , halved
  • 8 oz. black olives, sliced
  • 2 jars artichoke hearts, the small jars of marinated ones
  • parmesan cheese

Directions

Boil tortellini according to package instructions. Drain and put in a bowl to cool. Add garlic and pour 1 package dressing over tortellini. When cool, mix in remaining ingredients. Add more Zesty Italian and Parmesan cheese to taste. This is a very large salad and is best made the day ahead. Serves 10

Drain the artichoke hearts, if you like the marinade in the jar use some of it in the salad dressing. Big shreds of fresh parmesan from a block of cheese , shredded with a vegetable peeler looks nice when serving.

Tortellini Salad
