Ingredients

  • 3 large red peppers
  • oil to brush on peppers
  • 2 Tbsp olive oil
  • 3-4 cloves of garlic

Directions

Brush each pepper with a bit of oil. Roast in the oven, or grill on the stove top or barbecue until the peppers are totally black and well charred. Cool and peel. Slice and seed the pepers. Puree the seeded peppers in a blender with 2 Tbsp olive oil and garlic. Heat and serve over pasta.
