Ingredients

  • 3 sqs unsweetened chocolate
  • 4 eggs
  • 3 cups sugar
  • 1 1/2 cups oil
  • 3 cups flour
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 3 cups grated zucchini
  • 1 cup chopped nuts
  • 1 1/2 tsp vanilla

Directions

Melt chocolate over hot water; cool. In large bowl, beat eggs until thick and light-colored. Gradually add sugar. Beat well. Add oil and chocolate. Beat until well blended. At low speed, add flour, baking powder and baking soda. Mix until smooth. Add zucchini, nuts and vanilla. Stir until well mixed. Pour batter into greased and floured 10 inch tube pan. Bale at 350 degrees for 1 1/4 hours, or until tester comes out clean. Cool in pan on rack for 15 minutes. Remove from pan; cool on rack. Cut into 12 thin slices.
