• 2T butter
  • 2T all purpose flour
  • 1/2 cup Fish or Chicken Broth
  • 1/2 cup light cream
  • 3T Brandy
  • 2 T peppercorns (green or pink is Ok too)
  • 1 T chopped green onions
  • 1 T chopped parsley
  • 4-6 oz Monkfish fillets
  • 2 T melted butter
  • 1/2 t salt
  • 1/4 t white pepper


Heat the butter in a sauce pan and add the flour, then cook for 2 minutes over low heat. Stir in the broth, cream, brandy, and simmer until thickened. Stir in the peppercorns, green onions and parsley. While sauce simmers brush the fillets with the melted butter. Season with the salt and pepper, adn bake in a preheated 375 degree F oven for 10 minutes. Remove and place on serving plate. Cover with sauce and serve at once.
