Ingredients

  • 1 1/2 cups pared and grated zucchini
  • 1 cup sugar
  • 2 eggs, lightly beaten
  • 1/2 cup vegetable oil
  • 1 1/2 cups flour
  • 1 tsp. baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp. salt
  • 3/4 tsp. cinnamon
  • 1/2 cup chopped walnuts
  • 1/4 cup raisins
  • 1/4 cup chopped dates

Directions

In a large mixing bowl beat together the zucchini, sugar and eggs. Add the vegetable oil and mix well. In a separate bowl stir together flour, baking powder, baking soda, salt and cinnamon. Stir into zucchini mixture. Fold in walnuts, raisins and dates. Pour into greased 9 x 5 x 3 loaf pan. Bake at 325 degrees for about 60 to 70 minutes; remove from the pan. Cool thoroughly on a rack and store in an air-tight container.
