Ingredients
- 1 pound cream cheese
- 1 quarter cup granulated sugar
- 3 large eggs
- 1 half teaspoon grated lemon rind
- 1 teaspoon vanilla extract
- Topping:
- 1 cup sour cream
- 2 Tablespoons granulated sugar
- 1 teaspoon vanilla extract
Directions
Prepare a 10" spring-form pan as above. Sprinkle with crushed crumbs of your choice.
Preheat oven to 350.
In large mixing bowl, beat together the cream cheese and sugar until light and fluffy.
Add the eggs, one at a time, beating well after each addition.
Add lemon rind and vanilla. Mix briefly.
Pour into prepared crust for about 55 minutes, or until center is firm to the touch. Remove from oven and adjust temperature to 450 degrees.
Prepare topping by gently stirring the sour cream, sugar and vanilla together. Spread this over top of cake, spreading smoothly.
Return cake to oven and bake for another 8 to 10 minutes, until topping has set. Remove cake from oven and cool to room temperature. Chill until ready to serve.
