Ingredients

  • 1 Whole chicken
  • Several (3-6) cloves of garlic
  • 1 tablespoon rosemary or 1 sprig (about 5"" long) fresh rosemary
  • 1 tablespoon oregano or equivalent amount fresh
  • salt
  • fresh ground pepper
  • 2 tablespoons extra virgin olive oil
  • (All quantities are approximate)

Directions

Preheat oven to 375 degrees. I skin and cut the fat off the chicken because I prefer it that way. Mash, skin and chop the garlic into small pieces. Chop the rosemary (without stem) into small pieces. Put garlic, rosemary, oregano and olive oil in a small bowl and mix together. Spread this combination over the inside and outside of the entire chicken. Place chicken in glass 9"" x 9"" baking dish (or other baking pan), salt and pepper to taste and place in oven 'till well browned and leg can be easily removed, about 45 minutes. Experiment with variations. My family loves this flavor combination. I serve it with fresh garlic mashed potatoes.
