Ingredients
- 2 eggs
- 2/3 cup vegetable oil
- 2 cups buttermilk
- 3 1/2 cups all purpose flour
- 1 1/2 cups sugar
- 1 tsp. salt
- 4 tsp. baking powder
- 1 tsp. baking soda
- Grated rind of 4 oranges
- 2 1/2 cups frozen cranberries, halved
- 1/2 cup sugar
Directions
1. Combine the eggs, oil and buttermilk in a bowl and whisk together.
2. Sift the flour, sugar, baking powder, soda and salt into a a large bowl.
3. Add the rind and cranberries.
4. Add the liquid ingredients all at once and stir quickly to just mix. IMPORTANT: DO NOT OVERMIX OR THE MUFFINS WILL BE TOUGH AND HEAVY!
5. Line the muffin trays with paper cups and fill almost to the rim with batter. (I use large muffin tins.)
6. Sprinkle a teaspoon of sugar on the top of each muffin.
7.Bake in a preheated 350 oven for 25 to 30 minutes or until done.
8. Cool on a wire rack before removing the muffins from the tins.
NOTE: A streusel topping is also very good: 1/4 cup sugar,2 1/2 Tbs flour
1/2 tsp cinnamon, 1 1/2 Tbs softened butter. Mix and sprinkle on top of muffins before bking.
Yield: 20 muffins -- less if using large tins. These freeze beautifully.
