Ingredients

  • 1 pound penne or rigatoni, 1 tablespoon butter, 4 tablespoons procuitto, chopped fine, 2 ounces vodka, 3/4 cup marinara sauce, 1 1/2 cups heavy cream. 5 tablespoons mozzarella cheese, grated, 2 tablespoons parmesan cheese, grated, 1 tablespoon italiean parsely, fresh and chopped. Add butter to large saute pan. when melted, add procuitto. When ham sizzles remove pan from heat and add vodka. Return top heat and warm then add marinara. When warm add cream and simmer for about 20 minutes, until slightly thickened and pinkish in color.

Directions

Add butter to saute pan and melt. Add procuitto to pan and saute until sizzeling. Remove from heat and add vodka. Put back on heat and add marinara sauce. When warm, add cream and simmer about 20 minutes until slightly thickened and pinkish in color. Cook pasta according to package directions. Drain. Just before serving, add cheeses and parsley to saute pan. Pour over pasta and serve immediatley with additional parmesan cheese.


Serve with a lively looking salad and crusty bread. For dessert, have something light.
