Ingredients

  • 1/4 c. graham cracker crumbs
  • 3/4 c. plus 2 Tbsp. sugar
  • 3 Tbsp. sifted cornstarch
  • 30 oz. (3 1/4 large packages) cream cheese,
  • softened
  • 1 large egg
  • 1/2 c. heavy cream
  • 1/4 tsp. vanilla extract

Directions

1. Preheat the oven to 350 degrees. Generously butter bottom and sides of 8" springform pan. Lightly coat bottom of pan with graham cracker crumbs and refrigerate the pan.
2. In a large bowl, combine the sugar and
cornstarch. Beat in the cream cheese. Beat in the egg. Slowly drizzle in the cream, beating constantly. Add vanilla and stir well. Pour the mixture into prepared pan. Bake until the top is golden, 40-45mins. Cool in the pan on a wire rack for 3 hours. Refrigerate.
