Ingredients

  • 2 1/2 cups water
  • 1/3 pound salt pork
  • 1 medium smoked ham hock
  • 3 pounds collard greens
  • 2 tablespoons vinegar
  • 2 tablespoons sugar
  • salt to taste, optional

Directions

In medium saucepan, bring water to boil over high heat. Add salt pork and ham hock. Cover, reduce heat to medium and cook 45 minutes. Meanwhile, wash collard greens until water comes clean. Layer 3 or 4 collard greens in a stack. Roll jelly-roll fashion and slice into small pieces. Continue until all collards are chopped. Place chopped collards in a large soup pot. Pour salt pork, ham hock and liquid over the greens. Cover and bring water to a simmer over medium heat for 10 to 15 minutes. Add vinegar and sugar and salt if desired. Serves 6 to 8.
