Ingredients

  • The walnuts:
  • 1 Tbsp butter/marg
  • 1 C walnut halves or pieces
  • 2 Tbsp honey
  • the salad:
  • 3/4 C plus 2 Tbsp mayo
  • 1 Tbsp plus 1 tsp lemon juice
  • 1/2 tsp curry powder (optional, more to taste if desired)
  • freshly ground pepper to taste
  • 4-2/3 C cooked skinless chicken, thinly sliced
  • 2-1/2 to 3 C celery, finely chopped
  • 2-3 scallions, chopped
  • 1=1/4 cup seedless green or red grapes, quartered
  • 2 C assorted mixed greens
  • 1 large orange, peeled and thinly sliced

Directions

To prepare the walnuts:

In medium saucepan melt the butter over moderate heat. Add the walnuts and sautee for one minute. Stir in the honey and cook for about 3 minutes until the walnuts are coated and slightly caramelized. Remove from heat and set aside to cool.

To prepare the salad:

In a large bowl mix the mayo with the lemon juice and curry powder, then add salt and pepper to taste. Gently stir in the chicken, scallions and grapes and cooled walnuts, adjust the seasoning as needed. (the recipe can be prepared ahead up to this point)

Line the bottom of individual serving plates with the greens. Mound the chicken salad in the middle and surround it with the orange slices and some additional grapes.
