Ingredients

  • 1/2 cup margarine
  • 2 small onions, minced
  • 2 whole cloves
  • 1 teaspoon peppercorns
  • 2 cloves garlic, cut fine
  • 1/2 bay leaf
  • 6 Cornish hens
  • 2 cups white wine
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • Few grains cayenne
  • 1 teaspoon minced chives
  • 2 cups cream

Directions

Melt margarine, add onions, cloves, peppercorns, garlic, bay leaf. Cook several minutes. Add hens and brown on all sides. Add wine, salt, pepper, cayenne, and chives. Simmer about 30 minutes, Strain pan sauce. Add cream to sauce and bring to a boiling point. Pour over hens and serve. An electric skillet with high lid works well.Yield: 6 servings.
