Ingredients

  • 4 fresh ripe mangos -- peeled and chopped
  • 6 over-ripe bananas -- peeled and chopped
  • 1/2 cup white raisins
  • 1 cup lime juice
  • 1 red pepper -- chopped into fine julienne strips
  • 1/4 cup prepared horseradish
  • 1 tablespoon fresh minced ginger
  • 4 oz. major grapes for chutney
  • 1/2 cup white wine
  • 2 cups spring onion -- finely chopped (*)
  • 3 tablespoons cornflour to thicken (**)
  • (*) Green onions
  • (**) Cornstarch

Directions

Prepare vegetables and fruit.
Cook white wine with mangos, ginger, red pepper.
When the alcohol is cooked off, add the remaining ingredients.
Let simmer until all is cooked and blended together.
Let cool.
Puree in a food processor until smooth.
Serve with Caribbean Springrolls or as a BBQ glaze on chicken, pork or fish.
