Ingredients
- 6 large potatoes
- 3/4 cup cream
- 1/4 cup butter
- 2 teaspoons salt
- 1/4 teaspoon pepper
- 1-1/2 pounds fresh spinach
- 2 tablespoons chopped chives
- 3 teaspoons snipped fresh dill
Directions
Boil potatoes until thoroughly cooked. Drain and mash thoroughly with electric mixer. Add the cream, butter, salt and pepper. Beat until light and fluffy. Cook the spinach and chop if the leaves are large. Add the spinach, chives and dill to the mashed potatoes. Mix well. Place in a buttered casserole dish. Cover and bake for 20-25 minutes in a 375 oven.
Makes 5 servings.
