Ingredients

  • 1 teaspoon olive oil
  • 1 clove garlic, crushed
  • 2 cups small shrimp, peeled, deveined and cooked
  • 1 cup toasted bread cubes
  • Salt and pepper to taste
  • 2 pounds red snapper fillets
  • 8 ounces tomato sauce
  • 1/2 cup dry vermouth
  • 1 teaspoon sugar
  • 1/8 teaspoon cayenne pepper

Directions

Cook the garlic in the olive oil gently over low heat for 1-2 minutes (being sure not to burn the garlic). Add the shrimp, bread cubes and salt and pepper to taste. Combine these ingredients gently and quickly. Remove the pan from the heat.

Spray a shallown 2-quart baking dish with Pam and arrange 1/2 the fish fillets on the botton. Top the fish with an even layer of the sprimp and bread cube mixture. Arrange the remaining fish fillets over the shrimp and sprinkle the fish lightly with salt.

In a small bowl, combine the tomato sauce, vermouth, sugar and cayenne pepper and pour the mixture over the fish.

Bake uncovered in a preheated 350 degree oven for 30 minutes, basting occasionally.

This will serve 4 to 6 people
