- Your own good pastry for a 9-inch pie
- 2 cups brown sugar;packed down
- 2 Tbls. all-purpose flour
- Pinch salt
- 2 eggs
- 1 egg yolk
- 1 cup milk
- 1 tsp. vanilla extract
Roll out pastry and fit into 9-inch pie plate, trim and flute edges.
In a bowl, blend sugar, flour and salt. In a separate bowl, using electric mixer, beat eggs and yolk till frothy, beat in milk and vanilla. Stir egg mixture into sugar mixture, and mix until smooth. Pour into prepared pie pan and bake in a pre-heated 400*F. oven for 10 minutes. Reduce temperature to 350*F. and bake for another 35 minutes or till crust is golden brown and filling is set. Let cool on a rack.
