Very nice with a wine- Barbera D'Alba
Ingredients
- 4 strip sirloin steaks, 12-14 oz. each
- 8 oz. canned plum tomatoes
- 1/4 cup extra virgin olive oil
- 1 cup tomato juice
- 4 cloves garlic, sliced very thin
- 2 sprigs Italian parsley, chopped
- 1 Tbl. chopped onion
- 2 sprigs oregano leaves, chopped
- 1 cup red wine
- 1 tsp. salt
- 1 tsp crushed red pepper
- pinch of ground white pepper
Directions
Trim excess fat from sirloin. Dust with salt;pepper and pound with fist to spread it out a little. Heat olive oil very hot in a skillet and put the steaks in to brown for 2 minutes on each side. Add garlic and onion and saute with steaks for 1 minute more. Removes steaks, which will be medium rare, and keep warm. Add red wine, crushed red pepper, tomatoes and tomato juice and bring to a boil. Add parsley and oregano. reduce heat to a medium low and simmer for about 5 minutes. Serve steaks either napped with sauce or place sauce in sauce boat and serve according to individual taste.
